Veggie Jack Burrito

Ingredients

  • 2 cups broccoli flowerettes
  • 2 cups mushrooms, sliced
  • 1 red onion, sliced
  • 1 medium carrot, shredded
  • 1 medium zucchini, shredded
  • 1/4 cup green onion, sliced
  • 1 tbls vegetable oil
  • 1 clove garlic, minced
  • 3 cups Monterey Jack cheese or Mexican Cheese Blend
  • 8 flour tortillas
  • Green or red salsa

Directions

  1. Preheat oven to 400°.
  2. In 10" skillet, heat oil until sizzling; add vegetables and garlic.
  3. Cook over med. high heat until slightly tender, 5 to 7 minutes.
  4. Stir in 1 cup salsa.
  5. Place vegetable mixture and 2 cups cheese on tortillas.
  6. Fold burrito-or taco-style; place in 12 x 8 baking dish.
  7. Cover with foil.
  8. Bake for 15-20 min. or until heated through. Top with salsa and remaining cheese.
  9. Continue baking 5 to 7 min. or until cheese is melted.
  10. Makes 8 burritos.
