Herb Roasted Potatoes

Ingredients

  • 3 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 1/2 pounds fingerling potatoes, skin on, halved lengthwise

Directions

  1. Preheat oven to 425°.
  2. Line a rimmed baking sheet with foil.
  3. In a large bowl, whisk together the olive oil, lemon juice, garlic, oregano, thyme, salt and pepper.
  4. Add potatoes and toss to coat.
  5. Pour potatoes and oil mixture onto prepared baking sheet and arrange potatoes in a single layer.
  6. Bake 45-50 minutes, stirring occasionally, until potatoes are well browned.
  7. Serves 4.
