Grilled Sweet Corn with Spicy Lime Butter
- 8 tablespoons butter, room temperature
- Zest of 1 lime
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 6 ears fresh corn in the husk
- Combine butter, lime zest, cumin, salt and pepper in a small bowl and stir to combine well.
- Grill corn in the husk over medium-high heat until blackened.
- Remove husks and serve warm with lime butter.
- Serves 6.
