Fried Soft Shell Crabs
- 4 soft shell crabs
- 1 egg
- 1 cup all-purpose flour
- Salt and freshly ground pepper to taste
- Clean and rinse crabs. In a shallow dish, whisk egg with milk. In a second shallow dish, combine flour with salt and pepper.
- Heat oil in a deep skillet to about 365 degrees. Dip crabs in flour, then in egg mixture, then in flour again. Place crabs in oil and cook until golden brown.
- Remove crabs with a slotted spoon and drain on paper towels. If you like, serve with tarter or cocktail sauce. I prefer mine without any sauce.
