Cranberry Vinaigrette

Ingredients

  • 1/2 cup cranberries
  • 3 tablespoons sugar
  • 6 tablespoons cider vinegar
  • 1 teaspoon Dijon mustard
  • 3 tablespoons orange juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/2 cup vegetable oil

Directions

  1. Combine the cranberries, sugar and vinegar in a small saucepan and simmer for 4-5 minutes, unitl the berries pop.
  2. Cool and puree in a food processor. Add mustard, orange juice, salt and pepper to processor and pulse to combine.
  3. With processor running, drizzle in the oil until emulsified.
  4. Makes about 1 cup.
