Thai Coconut Peanut Sauce

Ingredients

  • 1 cup coconut milk, well shaken
  • 1/2 cup peanut butter
  • 1/4 cup Major Grey Chutney, chopped
  • 3 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon ginger paste
  • 2 teaspoons sesame oil
  • 1 clove garlic, finely minced
  • 1/4 teaspoon red pepper flakes

Directions

  1. Combine all ingredients in a small saucepan and whisk to combine.
  2. Simmer sauce over medium heat for 2-3 minutes, whisking occasionally.
  3. Serve warm over grilled chicken, fish or pork.
  4. Makes 2 cups.
