Stone Fruit Compote with Cinnamon and Ginger

Ingredients

  • 3 cups coarsely chopped stone fruit, such as plums, peaches and nectarines (about 1 pound)
  • 2 tablespoons honey
  • 2 tablespoons sugar
  • 1 tablespoon water
  • 1/4 teaspoon salt
  • 1 small cinnamon stick
  • 3 slices fresh ginger

Directions

  1. Combine ingredients in a medium saucepan and simmer over medium heat, stirring occasionally, until fruit is soft, 10-12 minutes.
  2. Cool, remove cinnamon stick and ginger, and serve with grilled fish or chicken or over frozen yogurt.
  3. Makes 1 & 1/2 cups.
