Grilled Sausage with Roquefort on Chargrilled Ciabatta (Chef Jason Sobocinski)
4 large sausages of your choice
1/2 lb Ile De France Roquefort
4 Ciabatta Rolls
Preheat your gas or charcoal grill to a medium heat.
Grill the sausages on your preheated grill until they are nicely browned on the outside and spurting a bit of their juices from their ends.
Once the sausages are fully cooked remove to rest for a few minutes before cutting them up.
Load up the Ciabatta rolls with a bit of Roquefort cheese spread onto each side of the inside of the rolls. Then a few nice slices of your grilled sausages divided up so that each sandwich gets a half of one sausage.
Now grill the sandwiches up outside over a chargrill with as low a heat as possible.
I like to wrap the sandwiches in heavy foil, then pop them on the grill flipping them every minute or so.
When they’re nice and toasted pop them out of the foil onto the grill just for a few seconds to get really crispy!
