Brie & Cocoa Cardona with Bittersweet Chocolate & Bananas on Country White
Grilled Cheese (Chef Jason Sobocinski)


  • 1/2 lb good ripe and slightly runny brie
  • 2 cups shredded Cocoa Cardona
  • 2 ripe bananas sliced into 1/4 inch slices
  • 1 cup bittersweet chocolate chips
  • 8 slightly thick slices of country white bread
  • 4 tablespoons unsalted fresh butter


  1. Preheat oven to 350°.
  2. Using a stand mixer with a paddle attachment, combine the brie & shredded cocoa cardona cheese until nicely incorporated.
  3. Divide into 4 equal portions and using parchment paper flatten out to fit atop a piece of the bread.
  4. Assemble the sandwiches by layering bread with the flattened cheese mix, then a scattering of bittersweet chocolate chips, then a layer of sliced bananas and topped with a piece of the country white bread.
  5. Make 4 equal sandwiches.
  6. In a large heavy bottomed skillet over medium heat melt half of the butter until foaming and place the sandwiches into griddle up.
  7. Allow them about a minute or 2 on the first side, adding the remaining butter and flipping to the other side.
  8. Remove the sandwiches once the bread is lightly crisped on both sides and place onto a sheet pan with a metal rack and into the preheated oven for just a few minutes checking often until the cheese is really melted and gooey.
  9. Remove and allow to rest before serving.
  10. Makes 4 sandwiches.
