Southwest Slaw

Ingredients

  • 6 cups thinly sliced green cabbage
  • 4 cups thinly sliced red cabbage
  •  
  • Dressing:

  • 1 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 3 tablespoons sugar
  • 6 scallions, thinly sliced and roughly chopped
  •

  • 3 tablespoons cider vinegar
  • 1 1/2 teaspoons cajun spices
  • 1 teaspoon salt

Directions

  1. Combine cabbage and scallions in a large bowl.
  2. Combine dressing ingredients in a medium bowl and whisk to combine.
  3. Toss cabbage mixture with dressing and allow to sit 30-60 minutes before serving.
  4. Serves 8-10.
