Nopalitos (cactus paddles) and Tomato Salad

Ingredients

  • 1 jar Embasa Nopalitos drained and rinsed
  • 2 cups coarsely chopped tomatoes
  • 1 cup coarsely chopped red onion
  • 1 hard-cooked egg, chopped
  • 4 ounces crumbled Queso Fresco or Monterey Jack cheese
  • 1/2 cup Italian
  • 1/2 cup chopped fresh cilantro (may substitute oregano)

Directions

  1. Combine ingredients in a large salad bowl.
  2. Serves 8.
