Sweet and Sour Cucumber Salad
- 3-4 cucumbers, peeled and thinly sliced
- 2 small onions, thinly sliced
- 1/4 cup white vinegar
- 1/4 cup sugar
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- Place cucumbers and onions in a large bowl.
- Combine vinegar, sugar, salt and pepper in a jar and shake well.
- Pour over cucumbers and toss to combine.
- Refrigerate 6 hours or overnight before serving.
- Serve cold.
- Serves 6-8.
