Chicken with Apricot, Brie and Almonds


  • Four 6-ounce boneless skinless chicken breasts
  • Salt and pepper
  • 2 tablespoons butter
  • 4 ounces Brie, rind removed, sliced
  • 4 tablespoons apricot preserves
  • 1/4 cup toasted sliced almonds


  1. Preheat oven to 350°.
  2. Grease an 11x7 inch baking dish.
  3. Sprinkle chicken breasts with salt and pepper.
  4. Melt butter in large nonstick sauté pan over medium heat.
  5. Add chicken and cook until golden brown on both sides and just cooked through, about 8-10 minutes.
  6. Place chicken in prepared baking dish.
  7. Top each piece of chicken with 1 ounce of Brie and 1 tablespoon apricot preserves.
  8. Sprinkle with almonds.
  9. Bake 12-15 minutes, until Brie is melted and topping mixture is bubbly.
  10. Serves 4.
