Baked Penne with Gouda and Sausage


  • 8 ounces penne pasta
  • 12 ounces cooked sausage (such as Aidell’s)
  • 1/2 cup diced roasted red peppers
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 6 ounces plain or smoked Gouda cheese, shredded
  • Salt and pepper, to taste
  • 1/2 cup shredded Parmesan cheese


  1. Preheat oven to 375°. Grease an 11x7-inch baking dish.
  2. Cook pasta for 7 minutes in boiling water and drain well. Grill or sear sausage and slice into 1/2 inch pieces. Combine pasta, sausage and roasted peppers in a large bowl and set aside.
  3. Melt butter in a saucepan over medium heat; whisk in flour. Gradually whisk in cream and chicken broth; simmer 2-3 minutes to thicken slightly. Stir in cheese until melted and smooth. Add salt and pepper to taste.
  4. Combine sauce with pasta mixture and stir well. Pour mixture into prepared baking dish and sprinkle with Parmesan cheese. Bake 30-35 minutes, until bubbly and beginning to brown.
  5. Serves 4-6.
