Oatmeal Pecan Cookies

Ingredients

  • 1 cup butter, softened
  • 1 cup packed brown sugar
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 3 cups oatmeal
  • 1 cup chopped, toasted pecans

Directions

  1. Preheat oven to 375°. Grease baking sheets or line with parchment.
  2. Combine butter, brown sugar and granulated sugar in a large mixing bowl and beat with an electric mixer until light and fluffy.
  3. Beat in eggs and vanilla. Combine flour, baking soda and salt in a medium bowl and whisk to mix.
  4. Gradually beat into butter mixture. Stir in oats and pecans.
  5. Scoop mixture into 1 1/2 -inch balls, placing 2 inches apart on prepared baking sheets.
  6. Bake for 10-12 minutes, until light golden brown. Transfer from baking sheets and cool on wire racks.
  7. Makes 4-5 dozen cookies.
