Potato Chip Cookies

Ingredients

  • 1 cup butter, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 3/4 cup crushed potato chips
  • 1/2 cup lightly toasted, ground pecans
  • 2 cups all-purpose flour
  • Additional sugar, for finishing cookies

Directions

  1. Preheat oven to 350°.
  2. Grease or line baking sheets with parchment paper.
  3. In a mixing bowl, cream butter and sugar thoroughly with an electric mixer.
  4. Add vanilla and mix well.
  5. Stir in potato chips and pecans.
  6. Add flour and stir to combine.
  7. Shape into 1-inch balls and place 2 inches apart on prepared baking sheets.
  8. Flatten gently with a glass dipped in sugar.
  9. Bake for 12-15 minutes or until lightly browned; remove from baking sheets and cool on a rack.
  10. Makes 2 1/2 dozen cookies.
