Brown Sugar Cinnamon Quick Bread


  • 1/4 cup vegetable oil
  • 1 cup sugar
  • 1 large egg
  • 1/2 cup sour cream
  • 1 teaspoon vanilla
  • 1 cup buttermilk
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup brown sugar
  • 1 tablespoon cinnamon


  1. Preheat oven to 350°. Grease a 9x5-inch loaf pan.
  2. Whisk oil, sugar, egg, sour cream and vanilla in a large bowl. Whisk in buttermilk, then flour, baking powder, baking soda and salt. Pour half of the batter into prepared pan.
  3. Combine brown sugar and cinnamon in a small bowl. Sprinkle 1/2 of the sugar mixture over batter; pour remaining batter evenly over top. Sprinkle remaining sugar mixture on top. Using a knife, swirl through batter.
  4. Bake 50-60 minutes, or until a toothpick inserted in center comes out clean. Cool 10 minutes, remove from pan and cool completely. Wrap in plastic wrap overnight before serving.
  5. Makes 1 loaf.
