Cucumber Tea Sandwiches


  • 2-4 small, thin cucumbers
  • Homemade bread, thinly sliced
  • Butter or mayonnaise
  • Watercress
  • Red onion


  1. Peel, score and thinly slice the cucumbers.
  2. Salt and let sit for 20-30 minutes.
  3. Drain cucumbers and squeeze gently to remove excess water. Pat dry with paper towels.
  4. Lightly butter bread or spread with a thin layer of mayonnaise. Top with cucumber slices.
  5. Add washed and dried watercress and/or thinly sliced onion.
  6. Cover with a second bread round.
