Cucumber Tea Sandwiches
- 2-4 small, thin cucumbers
- Homemade bread, thinly sliced
- Butter or mayonnaise
- Red onion
- Peel, score and thinly slice the cucumbers.
- Salt and let sit for 20-30 minutes.
- Drain cucumbers and squeeze gently to remove excess water. Pat dry with paper towels.
- Lightly butter bread or spread with a thin layer of mayonnaise. Top with cucumber slices.
- Add washed and dried watercress and/or thinly sliced onion.
- Cover with a second bread round.
