Fresh Peach Salsa
- 2 large peaches, peeled and diced
- 2 tablespoons fresh lime juice
- 2 tablespoons diced red bell pepper
- 1 tablespoon finely chopped red onion
- 1 tablespoon chopped fresh cilantro
- 1/2 jalapeno pepper, finely diced
- 2 teaspoons honey
- Combine ingredients in a small bowl and refrigerate 2 hours or overnight.
- Serve with grilled chicken or fish.
- Makes 1 cup.
