Marinated Mozzarella

Ingredients

  • 1/2 cup finely chopped roasted red peppers
  • 1/2 cup chopped fresh basil
  • 1/4 cup finely chopped kalamata olives
  • 2 cloves minced garlic
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • 1/4 teaspoon black pepper
  • 1/2 cup olive oil
  • 1 pound fresh mozzarella, cut into 1-inch pieces

Directions

  1. Combine all ingredients in a bowl, cover, and refrigerate 2-3 days.
  2. Makes 1 pound.
