- 8 medium cooking apples - peeled, cored and sliced
- 1/2 cup water
- 1/2 cup sugar
- 1/2 teaspoon cinnamon, optional
- Place apples and water in a 1 1/2 quart casserole and cover with plastic wrap.
- Microwave on high for 5 minutes and stir well.
- Return to microwave and cook 5-6 minutes, or until tender.
- Add sugar and cinnamon and mash with fork or process in food processor for a smoother texture.
- Serve warm or cold.
- Serves 4.
